Directions: Bring 3 cups water to a boil in a medium saucepan. Add 1 bag Dashi No Moto. Reduce heat and simmer covered for 10 minutes. Drain seasoning bag, remove and discard. Use dashi for soup stock and seasoning for traditional Japanese dishes as desired. Makes about 3 cups.
Ingredients: sardine, bonito, mackerel, seaweed, salt, monosodium glutamate.
Osuimono Japanese clear soup (3 to 4 servings)
1 Tbsp. fueru wakame
3 cups dashi
1 Tbsp. minced green onion and tops
4 oz tofu cut into 1/4 inch cubes (about 3/4 cup)
1 teaspoon soy sauce
Rehydrate wakame as package directs and drain well. Bring dashi to a boil in medium saucepan. Mix in green onion, tofu, soy sauce and wakame. Heat through. Ladle into serving bowls.
Quick soup stock for noodles
Combine 3 cups dashi, 1/4 cup manjo aji mirin and 2 tbsp. soy sauce in saucepan. Bring to boil and remove from heat. Serve hot over cooked udon or soba noodles. Garnish with minced green onion as desired. |
