Cooking suggestions: Soba noodles are mainly served in two ways: hot in soup, or served cold on a screen (usually made of bamboo) with a dipping sauce and condiments creating a great summer dish.

1. Bring water to a boil.
2. Put soba into the boiling water
3. As soon as the noodles become soft, drain well and rinse with cold water.
4. Put soba on top of a bamboo screen and serve with diluted soba sauce, chopped green onion or grated radish (daikon), and wasabe.

Cold soba: mix the condiments into the dipping sauce, then lift up the noodle completely from the bamboo screen with chopsticks, partly dipped them into the sauce, and slurp. Be careful not to dip the noodle completely into the sauce for its flavor will be masked.

Hot soba: easier to eat than cold soba. After all, it is only a bowl of buckwheat noodle soup. Since the hot soba doesn't possess the subtle flavor of the cold noodles, the quality of the hot soba really depends on the soup base it comes in, and that varies from one restaurant to another.

Soba is an annual plant of the Polygonaceae family. It is cultivated in many parts of the world for its edible seeds but is native to central Asia. It was also the major source of energy and food in ancient Japan. Buckwheat is rich in high-quality protein, vitamin B, rutin, a glycoside that is used for strengthening the capillaries of people with hypertension. Soba noodles were once only available in Japan. Now we can share these nutritious noodles at home and tap into the ancient secret of the healthy Japanese diet.
