Directions:
Stir 1 can Red Curry Paste with 2 cups of coconut milk for 5 minutes. Add 3 cups of diced chicken or beef Add 2-3 cups water. Continue boiling. Add 1-1/2 cup of small eggplant and 3 tbsp fish sauce until cooked. Sprinkle with sweet basil leaves and fresh chilies. (serves 9-10)
